SUMMARY:Cooking on Coals
DESCRIPTION:Cooking on Coals\nA day of adventurous eating and drinking!\nThree years ago a NY Times headline left an indelible mark\, “For a Better Steak\, Cook Directly on Charcoal.” Tell me more. You can read the entire article here\, but the basic point was that Dwight Eisenhower cooked some the most delicious\, immense steaks available by tossing them directly on hot coals! Of course I had to try. He was right. \nNow\, I’m looking forward to sharing this technique with you on Saturday\, August 25\, 2018\, at Natural Gardens in East Meredith\, NY. \nAt Cooking on Coals\, myself and other chefs are going to prepare for you some of the most delicious food you’ve encountered\, paired with libations and foraged delicacies. We’ll be cooking steaks and chops from beef and pork directly on the coals. We’ll be roasting vegetables in the coals. We’ll be slowly cooking other items above the coals. \nEverything will be paired with libations crafted from local distilleries\, breweries\, and cideries. During the afternoon\, stations will be set up around the grounds of Natural Gardens so that you’ll find tasty treats and refreshing beverages as you explore the ponds\, amazing flower gardens\, hop fields\, and woods. There will be guided tours to teach you about wild edible and medicinal plants. Many of these items will find their way into the food and beverage you consume. \nWe’ll be preparing food all day and evening\, so take your time to stop and smell the roses. Feed the koi. Have an extra cocktail. \nThe moon will be almost full\, so bring a blanket or a sweater and stay awhile. Oh\, and leave your heels at home. \nDON’T WORRY! Many people’s first thought is that the steak will be covered with ash. Believe me this is not the case. Because of the extremely high heat\, the dry rub that we put on turns into a crust that seals in the juices and no ash sticks to the meat. You will enjoy!
